VINEYARDS:
The vineyards are situated at the northern side of Tenerife in the Orotava Valley. The soil is volcanic with different compositions depending on each particular plot. The climate is humid sub-tropical. Composed of 35 plots from area winegrowers and from estate property with vines ranging from 10 to approximately 180 years old. The elevation of the different vineyards ranges from 350 to 700 meters above sea level.
VINIFICATION:
Grapes are harvested by hand during the first week of September through the last week of October. The different plots’ grapes are fermented separately in different temperature-controlled vessels, including 5,700 liter concrete tanks, open plastic and stainless steel vats. The fermentation is short, with a gentle skin contact period. The resulting wine is then matured for 8 months in concrete tanks (60%) and French oak barrels (40%).
