Ducato's Spring beer, New Morning, was born from an inspiration in the spring of 2006, during Giovanni Campari's training course at the Italian Brewery. Enthusiastic and excited because he felt he was about to realize the dream he had been hatching for a long time, every morning he repeated to himself "this is a new day" and since at the same time the first buds were blooming on the branches foreshadowing the beginning of spring, he decided to make a beer dedicated to this season, but also in a wider sense to rebirth and new life. What other beer lent itself better to the purpose if not a Saison, the beers traditionally produced by the farmers of the Walloon region of Hainaut, strongly linked to the land and to what it offers?
The nose reveals a spicy, earthy, floral aroma while the taste is mildly bitter, both thirst-quenching and refreshingly dry. Pairs well with raw fish, shellfish, and medium-aged cheeses.
