Wild fermented cider from apples foraged off 100 year old trees from an abandoned farmstead orchard on Thistle Hill. Over the decades of neglect the original orchard has created a wild apple forest that is about 5 acres! All the fruit is pulled out on ATVs, press into juice, and fermented in stainless steel with no additions of yeast or sulphites. The idea is to guide this remarkable place in to a bottle with as little intervention as possible.
Bone dry and tart with round tannins and herbal undertones. Prominent minerality. Pétillant. Some palates find it closer on the cider spectrum to a craft beer than a wine. Sour beer drinkers and IPA lovers really go for this.
